Due to my lactose intolerance, cheese is not my friend, but also, it is my daughter’s enemy. She’s been allergic to dairy since infancy. So I cannot buy most “non-dairy” cheeses because they are processed with casein, which defeats the purpose. The only exceptions are soy-based ricotta-like substitutes and cream cheese substitutes, i.e. SoyBoy ravioli and Tofutti.
“Real Genius” is one of my top ten movies. I took a personality quiz for shits and giggles, and got Chris Knight because although I have an IQ comparable to Einstein’s, I’m much more interested in having fun and not letting life pass me by. I busted my butt in school, tried to be the perfect kid, and almost had a breakdown. I took a much needed break from college, which gave me time to think about how I’d lived most of my life for others and tried to meet their expectations. I needed to figure out what I wanted from life. During this time, I discovered that I was pregnant, and my life took a different turn. I eventually went back to college for radio/tv broadcasting when the kids started school.
